Ingredients
  

  • 2 Tbsp. oil
  • 1/2 onion diced
  • 2 diced carrots
  • 1.5 Tbsp. tomato paste
  • 4 cups veggie broth
  • 14 ounces diced tomatoes
  • 1 cup green beans
  • 3 small potatoes
  • 1/2 zucchini
  • 1 Tbsp. lemon juice
  • Salt and pepper to taste
  • 3/4 tsp. garlic powder
  • 1/2 tsp ground mustard

Instructions
 

  • Sauté the onion, carrots, and celery for 8-10 minutes.
  • Add the tomato paste and stir.
  • Add the rest of the ingredients and simmer for 20-25 minutes.
