Depending on the state of the meat you bought, you will need to do a few things to prepare it for cooking. Some butchers will soak the tripe in brine, bleach it and boil it.
In such an instance, you want to make sure all the impurities from the meat have been removed. To do so, you should scrub your meat in a mixture of vinegar and rock salt. Then you should soak it in the cold water, rinse it and cut it into smaller pieces.
Remember to remove any excess parts you won't need before this step.
After you're done, you can move on to the next stage: cooking the tripe.
Cook the Tripe
The cooking stage is probably the most time-consuming part of preparing the dish, but it's also pretty undemanding.
Put your tripe in the pan and cover it with cold salty water. Let it reach the boiling point. You should boil the meat for at least an hour or two. You will know that the meat is ready once you can easily pierce it with a fork.
Don't worry about overcooking the tripe. It's almost impossible to do.
Prepare the other ingredients
While the tripe is boiling, you can prepare the rest of the ingredients. Start with the vegetables. Cut the onions into small pieces, do the same with peppers and grind the garlic. Sauté vegetables in the oil for about 5 minutes.
Mix all the ingredients
Once the tripe is boiled, you can mix all the ingredients. Add the meat to the pan with the veggies while keeping it on medium-high heat.
Add the wine and reduce it. Once that is done, add the tomato sauce and let the tripe simmer for about half an hour.
The last thing left to do is add all the spices and herbs and put the cheese on top.
Such a dish is tender, delicious, and ready to be consumed.
